The finest organic matcha from the top Nishio region in Aichi. Along with Kagoshima, Aichi Prefecture is a leader in the production of excellent organic matcha teas. With its ideal climate and excellent soil conditions, the region is perfectly suited for growing tencha. More than a quarter of Japan's total matcha production comes from this area. By using a special organic fertilizer, the tea farmer can guarantee consistently high product quality.
To cultivate our organic Mittsu Matcha, the plants are fully shaded (>90%) for at least three weeks. Only through this lack of light does the tencha develop its unique character and its fruity and nutty aromas.
After harvesting, the tea is gently dried and then traditionally ground on granite stone mills. This results in an extremely fine powder, allowing the tea to be whipped quickly and easily into a froth. Due to its lively and fresh character, matcha is best suited for making usucha (thin tea).
